Celery seeds are very small, so it is important to start them indoors 6-8 weeks before the last frost. Sow the seeds in a seed tray filled with a well-draining seed starting mix. Cover the seeds lightly with soil and keep them moist.

Place the seed tray in a warm, sunny location. The seeds will germinate in 7-10 days. Once the seedlings have emerged, thin them out so that they are spaced about 2 inches apart.

Blanching celery is a process of covering the stalks to prevent them from turning green. This results in a more tender and flavorful celery stalk.

There are two main methods of blanching celery:

  • Earthing Up: This method involves mounding soil around the base of the celery plants as they grow. The soil will cover the stalks and prevent them from turning green.
  • Cardboard Blanching: This method involves placing a piece of cardboard over the celery plants. The cardboard will block out the light and keep the stalks from turning green.

Celery is ready to harvest when the stalks are thick and firm. You can harvest individual stalks or the entire plant.

To harvest an individual stalk, simply cut it off at the base of the plant. To harvest the entire plant, cut the stalks off at the base and remove the roots.

Celery can be stored in the refrigerator for up to 2 weeks. Wrap the celery in a damp paper towel and place it in a plastic bag.

You can also store celery in the freezer for up to 6 months. Cut the celery into 1-inch pieces and freeze it in a freezer-safe bag.
